Indeed, you are correct. The following log entries turned up for my test
email (note the bad spelling for Subject:

And the email has moved to the incoming/ directory now. Looking through
the log files I can see where some of the emails have moved because I
can see the expanded pickup log entries and the emails are not in the
maildrop/ subdir.
It seems that the maildrop/ folder IS being read, but it's being
processed really slowly. I will turn off the smtp daemon for an hour or
so and let the pickup daemon have more time and resource to complete its
tasks.

Turning off the "pickup -v" logging (and other -v options in
master.cf) would also help.

THe logging level is rather high, and pickup will run much faster at a
reduced logging level (no -v options at all). After the queue drains, then
debug further with "-v", ...
